Network and this show came on called Healthy Appetite with Ellie
Krieger. I had to buy her cookbook and I hit the jackpot!!
I'll try as often as I can to post the new ones I try and like
throughout the week. I know everyone wonders, what can I eat when
trying to lose weight or to be healthy? I hope posting reciepes will
help you Mamas out!
Fettuccine with Creamy Red Pepper Sauce: an ultracreamy pasta dish and
takes only 15 mins to get on the table.
Ingredients:
2 Tbls olive oil
1 small onion, chopped
2 large garlic cloves, coarsely chopped
One 16 oz jar roasted red peppers, drained, rinsed, and chopped
1/2c low-sodium chicken broth
1c crumpled feta cheese
One 16 oz box whole wheat fettuccine
Salt and freshly ground pepper to taste
2 Tbls chopped fresh flat-leaf parsley
Heat the oil in a medium skillet over medium high heat. Add the onion
and garlic and cook, stirring a few times, until softened, about 5
mins. Add the roasted peppers and cook, stirring a few times, until
heated through. Remove from the heat and let cool slightly.
Transfer the red pepper mixture to a food processor, add the broth
and all but 2 Tbls of the feta. Process until combined and smooth,
about 30 seconds.
Cook the pasta according to the package directions. Drain, reserving
1/2 cup of the pasta water. Toss the pasta with sauce, adding the
pasta water by the Tbls if needed. The sauce should cling nicely to
the pasta. Season with salt and pepper. Sprinkle with the parsley and
reserved feta and serve.
